One of our favorite Thanksgiving recipes (Courtesy of Clare Harris, Legal Secretary for David T. Welch)

This is a 30 year family recipe from Clare and it is absolutely scrumptious!

Asparagus casserole

2 cans of asparagus or fresh
1 stick of butter
1 ½ cups cracker crumbs
4 tablespoons of butter
old English cheese spread
3 tablespoons of flour
1 ½ cups milk
salt and pepper to taste
paprika

Melt stick of butter and add cracker crumbs. Line the casserole dish with ½ of the mixture. set aside remainder.

Make cream sauce of 4 tablespoons of butter, 3 tablespoons of flour, 1 ½ cups of milk and the old English cheese spread, stirring until smooth and thick.

Put asparagus in casserole dish on top of crumbs, pour cream sauce over asparagus and sprinkle with rest of the crumbs. I find it’s easier to cut the asparagus spears in half before lining them in the dish and fresh tastes better than canned.

Bake at 450 degrees for about 12-14 minutes

Happy Thanksgiving!!
